Every ingredient I choose is raw, honest, and rooted in artisanal craftsmanship. Whether it’s carefully aged meat, freshly caught fish, or vegetables harvested at their peak, I treat each with respect, revealing its full character without artifice.
To me, cooking is much more than preparing food — it’s about telling a story, sharing emotion, and creating connection.
Each dish is born from a meeting between land, craft, and intention. I love going to the source, meeting producers, understanding their passion and their dedication. My role is to carry their work forward by honoring and elevating what they’ve created.
My cuisine is alive, sincere, and accessible.
It celebrates real flavor, the present moment, and the joy of being together — whether around a generous shared table or a carefully plated dish.
This is the vision I cultivate every day: a deeply human, grounded, and generous way of cooking.

Chef Lionel was fantastic. He is a great person, he was interactive, friendly, funny, engaging and knowledgeable. He has a passion for fantastic food, which was easy to see. For example he brought olive oil made from his own olives from the tree at his house. The menu was excellent and he was really responsive to our requests. After his initial menu thoughts we ended up with a lovely menu showcasing the seasonal products from the local area. He was quick to respond to messages and easy to engage with. Finally the quality of the food he produced was amazing. As beautiful as our most favourite restaurants - right up there in terms of taste and flavour. Thank you Lionel for making our celebration a special memory.
