I have worked in my family restaurant growing up. When i moved to Amsterdam i worked as a freelance chef and i broaden my experience and developed my cooking skills much more.

Born in Venice, Italy, my culinary journey has taken me across the Mediterranean and beyond. Years of international experience shaped my style and deepened my respect for authentic flavours. My foundation blends Italian heritage with global techniques and refined creativity. I spent the last decade between Spain and London, mastering high-end cuisine protocols and working in luxury hotels like Hilton, Claridge’s, and Mandarin Oriental elevated my craft. There, I learned to satisfy the most demanding and sophisticated palates. Now settled in Gran Canaria, I’m inspired daily by the ocean breeze and local bounty. As a private chef, I work closely with island farmers and producers to create conscious cuisine. My mission is to offer memorable, sustainable meals that honor both people and the planet. With a Master's degree in Hospitality Management from Vatel and a vocational diploma in Cooking from Jean-Passedat, I honed my skills working alongside international chefs. My cuisine draws inspiration from Mediterranean flavors, to which I like to add Asian influences. I also specialize in homemade fresh pasta, a skill passed down from my Italian grandmother.

I'm Jose Robledo, a chef from Mendoza and a mandolin enthusiast at heart, passionate about creating gastronomic experiences that convey the essence of our land. I work in Mendoza during the Argentine summer, offering private experiences among vineyards, wineries, and mountain lodges; and during the European summers, I'm based in Ibiza, where I continue to share my cuisine with those who enjoy traveling and experiencing authentic moments around the table. My cuisine has Argentine and Mendoza roots, with a deep respect for local produce, fire, and tradition. My specialties include Argentine and open-fire cooking, meats, empanadas, and regional flavors, but I also enjoy creating dishes with Asian, Mediterranean, and rice influences. I strive to make each experience intimate, relaxed, and meticulously crafted. My goal is for every meal to be a journey through the flavors of Mendoza, with the touch of hospitality and warmth that characterizes our region.

I have been crafting memorable moments for restaurant guests for over seven years. For two of those years I have been in culinary roles, and I have been honing my craft since I could balance on a stool to help in the kitchen. Food and fire were my first loves because of the strong communal aspects of both, and I am passionate about sharing that love with each plate I put forth. I was taught to cook by my family and built on those fundamental skills on my own time and in the workplace. A perfect bite is a balancing act, and one of my favorite dishes to showcase this is my Boozy Chicken PB&J, which features a peanut gravy and onion-beer jam.
