Executive Chef Eric Heurtel has worked in luxury hotels and restaurants in France and abroad (Egypt, Emirates, Morocco, China...). He has collaborated with renowned chefs such as Jacky Freont (1st Bocuse d'Or), Clement Soustra, Jacques de Ribaucourt, Yves Thuries MOF, Frédérique Blanc, Joel Normand MOF, and many others. Formerly a restaurateur and manager of Hostellerie du Prieuré in Harfleur, Master Chef, Companion of the Tour de France, Euro-Toques member, Toques Normandes member, Vice-President of Synhorcat Normandy, and President of the restaurateurs in Le Havre. Eric Heurtel has worked for President Obama, Gorbachev, Mitterrand, Sheikhs in the Emirates of Dubai & Abu Dhabi, as well as numerous personalities from the film and music industry, and recently, the Prime Minister of Canada, Mr. Paul Martin.
The use of fresh, organic, and seasonal products, along with the modernity of his dishes, defines his culinary signature.
