My food tells a story about a very curious little girl, stealing eggs to feed her grandma's cats, whisking them with improbable ingredients to see what would happen. Funny thing is that those cats would love those messy experiments. After cats, she would try with humans, and eventually they became addicted to her food. That little girl became a woman, me, Gilda.

I don't play fancy; I am authentic. I believe that squeezing tomatoes by hand is a duty to my maternal grandmother, who taught me to respect ingredients and be unique in simplicity. Long waits give the best results, and I am very patient. My favorite dish is Parmigiana di melanzane, and everyone loves my Tiramisu.
