Hola! Ciao! Salam! I'm Gianmarco

My love for cooking began at six years old in my grandmother's kitchen in Milan, spending summers making endless jars of tomato sauce to last through the winter. Those moments taught me that food is much more than nourishment—it is memory, tradition, and a way of bringing people together.

That passion led me to professional kitchens and to study gastronomic sciences while travelling and living across North Africa, Latin America, and Southern Europe. After more than a decade immersed in North African culture, I fell deeply in love with the flavours, techniques, and stories of the Maghreb.

I wanted to share that heritage through my own lens: ancestral charcoal cooking, handmade breads, seasonal Mallorcan produce, and creative Mediterranean influences. My cuisine is rooted in tradition but always open to innovation.

The dishes closest to my heart are my charcoal-cooked lamb tajine with caramelised plums and apricots, succulent lamb cooked slowly over the embers, handmade Moroccan M'semmen—the iconic four-layered flatbread that is both crispy and soft—a chermoula red snapper ceviche, often prepared with fish I've caught myself, and, of course, a perfectly balanced tomato sauce.

Beyond the plate, I love creating immersive dining experiences inspired by A Thousand and One Nights, where food, atmosphere, and storytelling come together to transport guests and create unforgettable memories. See you soon. Until we share bread around the fire
