My cooking is rooted in the bold, soulful character of South African cuisine — elevated through classical technique and presented with the precision of fine dining. I work with the seasons, I work with the land, and I work with the person sitting across the table in mind. Whether it is a perfectly seared beef fillet on a bed of heritage vegetables, hand-rolled pasta with locally sourced seafood, or a deconstructed dessert built around edible flowers and fresh berries — every dish I create is intentional, personal, and unforgettable.
