Private chef and entrepreneur, Nicola Casties founded Le Volodia in Montpellier in 2007 and ran it until 2018, earning a Gault&Millau toque in 2014. In 2020, he opened Le JOÜY in Paris, awarded a toque in 2024 and 2025, before selling it in 2025. Since then, JOÜY has become his private dining house in a traveling format.
His cuisine is rooted in French techniques, enriched with Latin and Asian influences, and aims to deliver a controlled “aromatic surprise.”
HACCP certified, professional liability insured, fluent in French and English. Based in Île-de-France and available for travel.

Nicola cooked a birthday brunch for my friends and I, and it was genuinely one of the best meals I've had. I came to him with a simple request: a hearty brunch. He took that and turned it into something really special. He's warm, professional, personable, and his presentation is stunning. What blew me away was how he elevated the familiar into something extraordinary. He did these incredible whipped cheese courses: same base cheese, prepared two ways, sweet and savory. It was as clever as it was delicious. His grandmother's compote was a beautiful personal touch. And the French toast? I've had a lot of French toast in my life.. this was the BEST. If you're on the fence, just book him.
