I'm Jose Robledo, a chef from Mendoza and a mandolin enthusiast at heart, passionate about creating gastronomic experiences that convey the essence of our land. I work in Mendoza during the Argentine summer, offering private experiences among vineyards, wineries, and mountain lodges; and during the European summers, I'm based in Ibiza, where I continue to share my cuisine with those who enjoy traveling and experiencing authentic moments around the table.

My cuisine has Argentine and Mendoza roots, with a deep respect for local produce, fire, and tradition. My specialties include Argentine and open-fire cooking, meats, empanadas, and regional flavors, but I also enjoy creating dishes with Asian, Mediterranean, and rice influences.
