I'm Chef Juanca. I trained in highly demanding kitchens, and since I started in this profession eight years ago, I've worked in top-level kitchens, gained experience in gastronomic projects and events, and in recent years as a private chef, working with high-performance athletes. My career has taken me through renowned restaurants and allowed me to develop my own style and a strong sense of responsibility for good food. Nutrition and the pleasure of eating well have merged, giving rise to a signature cuisine with personality and knowledge not only of the product but also of how that product and its nutrients benefit our body, mind, and spirit. This approach has given me greater sensitivity towards people and has helped me understand that connecting through gastronomy is pure magic.
