I’m a Uruguayan chef who has lived in Australia for nine years. I’ve travelled the world surfing, tasting new flavours and capturing moments through my camera.
Working in restaurants with different styles and living in the Northern Rivers gave me a wide knowledge of ingredients and the fusion of cuisines from around the world. My roots are in the Rio de la Plata culture with strong Italian, Spanish and Mediterranean influences, but I was also drawn to Japanese cuisine. I like to mix traditional flavours to create modern combinations while keeping the comfort of home cooking, the kind that reminds you of a mother or a nona.
I enjoy cooking for people and creating food that's nourishing and nutritional, if required with a focus on performance for athletes, always keeping flavour at the centre.
