I’m Angelica Convertino — a guardian of Apulian tradition.
My work is about bringing the true essence of our land — its history, its culture, its soul — to the table, for those seeking a unique and meaningful experience, wherever they are.
I grew up with my nonna in a masseria, surrounded by pastures, olive trees, flour-dusted tables, and sun-ripened tomatoes. Those memories shaped me. Today, with passion and dedication, I recreate the genuine flavors that tell the story of Puglia.
For me, quality is essential. I carefully select only local, organic, farm-to-table ingredients to craft dishes that honor tradition without compromise.
My expertise lies in traditional cooking methods — the ones that define our region’s cuisine:
orecchiette shaped by hand, brasciole slow-simmered with care, panzerotti golden and fragrant, pignata cooking over time, and charcoal grilling just like in the old days.
Every dish is prepared with techniques that elevate each ingredient and celebrate every detail, creating an unforgettable gastronomic experience.
