Hi! I'm Zico - I've been behind the oven for a few years now and I still find it most rewarding to make people happy with freshly baked pizzas.
I've gained most of my experience through practical experience. Lots of practice, lots of tasting, and constant improvement. I learned a long time ago how important good dough is. We work with dough that's been given time to rise, use fresh ingredients, and bake everything in a hot oven on-site. Simple, but good.
The dish I'm most proud of is actually the classic Margherita. When it's right, everything is right. A nice, fluffy crust, good sauce, melted mozzarella, and a touch of basil. Sounds simple, but that's precisely the challenge.
I love the atmosphere at festivals, weddings, small house parties, company events. Basically, anywhere where people love delicious pizza, haha! Seeing people make their pizza and then receiving it hot from our wood-fired oven makes the job enjoyable. Good pizza, distinct flavors, and a great experienceโthat's what I stand for.
