I bring to your kitchen the experience gained at five different Michelin-starred restaurants (1/2 Michelin star) and the technical precision of haute cuisine learned at the Food Academy in Milan. At 28, my culinary philosophy combines the discipline of Italian tradition with an obsessive search for raw ingredients, perfected with specific master classes in Wagyu, Omakase, and fish maturation. What sets me apart is my total mastery of the ingredients: from the art of butchery to the precision of professional pastry making. My specialty is the 'Dry Aged Fish Omakase,' a process where fish matures to enhance unexpected flavors and textures, transforming a dinner into a unique sensory experience.
The dish I'm most proud of? My 'Evolutionary Nigiri' with dry-aged fish: a perfect balance between Japanese technique and Mediterranean excellence. Choosing me means bringing to the table not just a menu, but the rigor and emotion of Michelin-starred cuisine, meticulously crafted down to the smallest detail.
