Hello to all food lovers, I am Salvucci Federico - I've been a cook for 13 years now and I've had my own restaurant for more than 2 years.
After 2 years in traditional cuisines I attended the Italian Haute Cuisine School, the Alma culinary school, and after about 1 year of study I traveled a bit around Italy and the world passing through Vicenza, Sankt Moritz until I returned to Rome to open my own restaurant.
To date I don't have a single definition of type of cuisine except Anarchic, that is, I do what I want by combining particular tastes and modifying traditional recipes, raising their potential, respecting the environment 100%, making the most of every part of an ingredient from A to Z. It is no coincidence that one of the simplest but most successful dishes in my path was to modify the Amatriciana, adding two ingredients that make it no longer traditional but less heavy and indeed more satisfying (you will find out what they are if I cook it for you).
