
About Chef Federico Iwakawa-Shiga
Federico Iwakawa is an Argentinian chef of Italo-Japanese heritage, based in France. After completing culinary school in Cordoba, his passion for adventure took him to New Zealand and Australia, where he honed his skills in neo-bistros and fine dining restaurants.
Extensive travels across Asia further shaped his culinary vision before he arrived in Paris, where he worked as Sous-Chef at Polissons alongside Romain Lamon. He then contributed to the opening of Pagaille as Second de Cuisine.
Always seeking new challenges, Federico Iwakawa is now a resident chef at Les Rรฉsidents, where he crafts innovative cuisine inspired by his multicultural roots and global experiences, while showcasing seasonal and local ingredients.
