About Chef Damien Lhortolat
I Graduated from the Paul Bocuse Institute in 2023, I have been passionate about cooking since childhood. My inspirations are primarily Mediterranean due to my Sicilian origins.
In 2020, during the Covid pandemic when restaurants were closed, I co-founded Convivium Traiteur in response to friends asking me to come and cook for them.
In 2022, I won the World Championship in Praline Culinary Creation and formed a partnership with Chef Mattéo Ivanchak, whom I met at the Institute. The two of us complement each other well – his inspirations lean towards Asia, allowing us to offer a unique and youthful chef duo that can take our guests on a culinary journey across continents.
